Oh, please, holy hell, no! Please do not make emailing the default option. I get plenty of spam and I do not need the site sending more. I can easily check for myself if a thread I started has received any posts,

Coming back to this because I don't think any admins have responded. Thanks to those that tried to help, though.

Is there a way for me to set my default settings so that the options on each post are set how I want them?

Or, am I wrong and the options at the bottom of each post do not override my default?

Here's a response from an admin. I am not subscribed to any threads as I have to look at all new posts. Therefore, I have no experience with subscriptions or notifications to same.

Play around with your settings till you get what you want is the best I can do for you.

I would recommend this:
Subscribe to a thread, make another new post to the same thread without changing any settings, then check your subscriptions under the user control panel ("user cp" link just below the site banner). This should answer the question of whether or not making a new post in a subscribed thread changes your preferred settings.

I am still subscribed to this thread despite the default "do not subscribe" radio button being checked.
